Easy Muesli Slice

a little chewy, moist + satisfying!


If you know me, you know I am OBSESSED with a good muesli slice, this one does not disappoint.

Years ago when I worked in retail, I used to go past the farmers market on my way to work on a Saturday with a gorgeous friend of mine, Nat and grab a huge slice of muesli slice. My lovely sister in law Lucy shared this recipe with me recently, (one I gave her years ago). I’ve made a few tweaks to up the nutrition and it’s now on repeat at our house!


ingredients,

1/2 cup (125ml) maple syrup

1/2 cup nut butter (easy nut butter recipe here)

3/4 cup almond meal

1/2 cup flaked or desiccated coconut

3/4 cup dried fruit (I used sulfur free dried apricots + dried apple)

1/3 cup hazelnuts (optional or sub for more pumpkin/sunflower seeds)

1/2 cup pumpkin seeds + sunflower seeds

2 eggs lightly beaten

1 teaspoon (5ml) vanilla extract

1 teaspoon baking powder

good pinch sea salt

method,

Heat oven to 180C and line a baking tin with baking paper (mines 28 x 18) .

Add dry ingredients to a food processor and blend until desired consistency. (see notes below)

Melt maple syrup and nut butter together on the stove.

Mix dry ingredients into nut butter mix, add eggs (don’t overmix).

Pour into prepared tin and bake 20mins.

notes.

I add to food processor in this order and pulse in between to get desired consistency: dried fruit, nuts/seeds, rest of dry ingredients.

I mix the wet and dry ingredients together by hand so as not to overmix.
