Lee’s Antioxidant Seed + Nut Slice


ingredients

1 cup almonds

1 cup cashews

1/2 cup walnuts

1/2 cup pepitas

1 cup shredded coconut

1/2 cup quinoa flakes

1/4 cup goji berries

2 tablespoons ground flax seed

1 tablespoon beetroot powder (could use acai, pitya or any berry powder or omit)*

*this is what makes it a gorgeous pink colour and adds the extra antioxidants

method

Blitz nuts and seeds in a food processor to your preferred texture, then transfer to a bowl.

Melt 1/2 cup cacao butter over a double boiler.

Once melted stir in 2 tablespoons raw honey, (maple syrup or sweetener of choice).

Add to dry mix and stir through.

Press into a lined baking tray and refrigerate until set.

Once set, slice up and drizzle with dark chocolate if desired. I used a 100g bag of Loco Love chocolate chips.

Lee recommends half and half, keeping half raw and drizzling half with chocolate.
